Basque Chicken Stew

Spanish style stew

Ingredients

  • 6 chicken thighs- skinned, meat removed from the bone and cut into 1 inch cubes
  • 1/4 tea salt
  • 1/4 tea pepper
  • olive oil
  • 1 medium onion- chopped
  • 1 red pepper- sliced
  • 2 cloves garlic-minced
  • 14 oz. can whole tomatoes
  • 1 cup no salt chicken broth
  • 1/2 tea thyme
  • 3 medium potatoes- peeled and cubed
  • 1 small jar of green olives (with pits)

Preparation

Step 1

SEASON chicken with salt and pepper and saute in olive oil until golden brown. Remove from pan.
ADD onions and peppers to pan and saute for 5 minutes.
ADD garlic to pan and saute for 1 minute
ADD tomatoes, broth, chicken, olives and thyme into pot.
BRING to boil, reduce heat and simmer until potatoes are done.
