Ingredients

  • 6

    chicken thighs- skinned, meat removed from the bone and cut into 1 inch cubes

  • 1/4

    tea salt

  • 1/4

    tea pepper

  • olive oil

  • 1

    medium onion- chopped

  • 1

    red pepper- sliced

  • 2

    cloves garlic-minced

  • 14 oz. can whole tomatoes

  • 1

    cup no salt chicken broth

  • 1/2

    tea thyme

  • 3

    medium potatoes- peeled and cubed

  • 1

    small jar of green olives (with pits)

Directions

SEASON chicken with salt and pepper and saute in olive oil until golden brown. Remove from pan. ADD onions and peppers to pan and saute for 5 minutes. ADD garlic to pan and saute for 1 minute ADD tomatoes, broth, chicken, olives and thyme into pot. BRING to boil, reduce heat and simmer until potatoes are done.
