Chicken Fettuccine Alfredo

Ingredients

  • 6 ounces uncooked fettuccine, cooked
  • 1 T. butter
  • 1 lb boneless, skinless chicken breasts, cubed
  • 1/2 medium onion, finely chopped
  • 3 large garlic cloves, crushed
  • 1/4 t. cayenne pepper (or to taste)
  • 1/2 t. salt
  • 5 t. flour
  • 1 1/2 c. evaporated skim milk
  • pepper, to taste
  • 1/2 c. freshly grated parmesan cheese

Preparation

Step 1

1. In a large skillet melt butter over medium high heat.

2. Add in chicken, onion, garlic. cayenne pepper and salt; saute til chicken is no longer pink.

3. Stir in flour until blended (about 1 minute).

4. Slowly stir in milk and cheese; cook stirring for 2 minutes or til thickened. Season with black pepper.

5. Toss cooked fettuccine with sauce mixture.

6. Pass more parmesan and black pepper at table.
