Ingredients

  • 1 medium sized green zucchini, sliced thinly
  • 1 medium sized yellow zucchini, sliced thinly
  • 1 small onion, diced small
  • 3 cloves garlic, minced
  • 1 large tomato, diced small
  • 1 package shredded Mozzarella cheese
  • Balsamic Vinegar Glaze
  • Olive oil spray
  • 1/4 c. French fried onions
  • 1/4 c. Parmesan cheese

Preparation

Step 1

Mix the diced tomatoes with the minced garlic
Spray a 9x11 casserole with olive oil
Layer zucchini all over the bottom of the casserole
Sprinkle a layer of the tomato-garlic mix
Sprinkle a layer of the mozzarella cheese
Squirt wiggles of Balsamic glaze over the cheese
Sprinkle some of the fried onion crisps evenly over all
Spray olive oil all over all
Repeat all layers until all of the ingredients are used

Bake in 350 degree oven for 40 minutes

Remove from the oven and sprinkle Parmesan cheese over all.
