Chinese Beef or Pork and Rice

Ingredients

  • 1/3 cup uncooked rice
  • 1/4 cup onion, chopped
  • 1 stalk celery, chopped
  • 2 T oil
  • 3/4 cup water
  • 1 chicken or beef buillon cube
  • 1 cup cut up cooked pork or beef
  • 1/2 green pepper, chopped

Preparation

Step 1

In 8 inch skillet, cook and stir rice, onion and celery in 2 T oil over medium heat until the rice is golden and the onion is tender. Stir in water, bouillon cube, meat. Cover tightly and simmer until rice is tender, 12-15 minutes. Stir in green pepper; cover and simmer until liquid is absorbed and pepper is crisp, about 5 minutes.
