BAKED POTATO SOUP

  • 6 large russet pot. peeled and cut into 1/2 in cubes
  • 1 1arge onion. chopped
  • 3 can chix broth with roasted garlic
  • 1/4 cup butter
  • 2 1/2 t salt
  • 1 1/4 pepper
  • 1 cup 1/2 1/2
  • 1 cup shredded cheese
  • 3 T chopped fresh chives
  • 1 8oz sour cream
  • 4 bacon slices, cooked chopped
  • shredded cheese

Preparation

Step 1

combine first 6 ingred. in crock pot..cover and cook on hight 4 hours or low 8 hours..until potatoes are tender...mash mix until potatoes are coarsely chopped and soup is slightly thickened..stir in 1/2 1/2,cheese and chives..top with sour cream..sprinkle wih bacon and cheese
