Cherry Pie

Ingredients

  • 2 16 oz cans pitted tart red cherries (water packed)
  • 1 1/2 C sugar
  • 1/3 C cornstarch
  • 1 T butter
  • 3 or 4 drops almond extract
  • Pastry for a lattice top pie

Preparation

Step 1

1. Drain cherries reserve 1 C liquid.

2. Combine 3/4 C sugar, cornstarch, and dash salt, stir in reserved liquid.

3. Cook and stir til thickened and bubbly. Cook and stir 1 minute more.

4. Remove from heat and stir in remaining 1/4 C sugar, the cherries, butter and almond extract. If desired, add 10 drops of red food coloring.

5. Prepare pastry, fill. Adjust lattice top. Brush with a little milk and sprinkle with sugar if desired.

6. Cover edges with foil, bake 375 deg. for 25 minutes. Remove foil and bake another 25 - 30 minutes.
