Ingredients
- 2 T butter
- 2 T olive oil
- 4 medium onions, thinly sliced (Spanish, red or white)
- 4 cans consommé or beef broth (homemade is better)
- 1/2 cup dry red wine
- 1 cup left-over morning coffee
- 1/2 cup grated carrot
- 1/4 t salt
- 1 t pepper
- slices of toasted bread - baguette
- Shredded Gruyere, Mozzarella or Monterey Jack cheese
Preparation
Step 1
Method:
Melt butter and olive oil in a large part. Separate the onion rings and add to the pot, cooking on medium, until tender and yellow. When onions are cooked, add beef broth, coffee, grated carrot, salt and pepper. Simmer for 40 to 45 minutes. Add wine.
Pour soup in bowls and trim slices of toast to fit bowls. Add shredded cheese on top of toast slices. Place bowls on a cookie sheet and broil, second shelf down, until cheese melts and starts to brown. Serve immediately.
