Layered Enchilada Bake

  • 1 lb ground beef
  • 16oz jar Thick n Chunky salsa
  • 15oz can whole black beans, drained
  • 6 8” flour tortillas
  • 1 1/2 cups sour cream
  • 2 cups shredded cheddar cheese

Preparation

Step 1

Cook and drain ground beef. Add salsa and black beans, mix well. Arrange 3 tortillas in single layer along bottom of 9x13 baking dish (tortillas will overlap each other). Cover layer with ½ of beef mixture. Cover with ½ of cheese and sour cream. Repeat layers again. Cover with foil and bake at 400 for 30 minutes. Uncover and bake an additional 5-10 minutes until all cheese is melted.
