Vegan Peppermint Ice Cream

Ingredients

  • 1 can full fat coconut milk
  • 1 cup almond milk
  • 1 TBSP cornstarch
  • 1/4 cup agave
  • 1 tsp peppermint extract
  • 10 round peppermint candies, crushed
  • (optional: seeds from 1 vanilla bean)

Preparation

Step 1

-Place coconut milk, almond milk, cornstarch, agave, peppermint extract and optional vanilla seeds in a blender until combined.
-Fold in peppermint candy pieces.
-If you don't have an ice cream maker, place in freezer and stir vigorously every hour for 6 hours.
