Ingredients
- 4 oz. butter
- 5 oz. all purpose flour
- 1 cup celery, chopped
- 1 cut onion, chopped
- 1/4 t white pepper
- 1/4 t cayenne pepper
- 1 t garlic, finely chopped
- 1/2 t lemon juice
- 1 lemon wedge
- 2-1/2 cups seafood broth or chicken broth
- 2 cups heavy cream
- 1/2 cup vodka
Preparation
Step 1
Method:
In a medium saucepan, heat butter until melted.
Sauté celery, onion, garlic, cayenne and white pepper until vegetables are tender.
Add flour and mix well to remove lumps.
Add all remaining ingredients except salt. Bring to a simmer and cook about five minutes.
Add salt to taste.
Strain and set aside.
