Couscous with Red Onion & Chives

Ingredients

  • 1 1/2 cups chopped red onion
  • 2 teaspoons olive oil
  • 2 tablespoons balsamic vinegar
  • 2/3 cup couscous
  • 1 cup boiling water
  • 3 tablespoons chopped fresh chives

Preparation

Step 1

In a saucepan cook onion in oil over moderately low heat, stirring, until softened. Add vinegar and cook 1 minute.

Remove pan from heat and stir in couscous, boiling water, and salt and pepper to taste. Let couscous mixture stand, covered, 5 minutes, then fluff with a fork and stir in chives.
