Cauliflower Soup

Ingredients

  • 1/2 caulifower
  • 2 large carrots
  • 2 med potatoes
  • 2 knorr stock cubes (1 beef,1 chicken, or 2 veg)
  • 1 litre water
  • 2 bay leaves
  • 2 tbsp table cream

Preparation

Step 1

Peel and dice the potaoes and carrots. Break the cauliflower into tiny florets. Place vegs in a pan with the water, bay leaves and stock cubes. Simmer until vegetables are tender (app 30 min)
Liquidize in batches, mash vegetables, or leave vegetables chunky, according to taste. Check seasoning. Can be frozen before adding cream. Stir in cream just before serving.
