Ingredients
- 3 hard boiled eggs - separate whites and yolks (crumble whites)
- 3 T sugar
- 1-1/2 t dry mustard (not “T” Al!)
- 3 T cider vinegar
- 1/2 lb. bacon
- romaine lettuce
- 3 green onions
Preparation
Step 1
Method:
Tear romaine lettuce into bight-sized pieces and place in salad bowl.
Mash egg yolks and add sugar, mustard and cider vinegar. Stir until smooth.
Fry bacon until crisp. Crumble bacon and reserve 1/4 cup bacon drippings.
Drizzle mustard/egg mixture over lettuce.
Drizzle warm bacon drippings over the lettuce.
Garnish with crumbled egg whites, crumbled bacon and 3 chopped green onions.
