Chipotle Lime Corn on the Cob

Ingredients

  • 6 lg. ears sweet corn in husks
  • 1/2 c. mayo
  • 1 chipotle pepper in adobo sauce, finely chopped
  • 2 tbsp. minced fresh cilantro
  • 2 tbsp. lime juice
  • 1 1/2 tsp. grated lime peel
  • 1 garlic clove, minced
  • 1/2 c. grated Asiago cheese

Preparation

Step 1

Carefully peel back corn husks to within 1" of bottoms; remove silk. Rewrap corn in husks and secure with kitchen string. Place in stockpot; cover with cold water. Soak for 20 mins.; drain.
Grill corn, covered, over med. heat for 25-30 mins. or till tender, turning often.
In a small bowl, combien the mayo, chipotle, cilantro, lime juice, lime peel and garlic; spread one heaping tbsp. over each ear of corn. Sprinkle with Asiago cheese.
