Squash Soup

Ingredients

  • 1 large acorn squash, peeled and large dice
  • 1 medium onion, medium dice
  • 1-2 t. curry (depending on intenisty of curry you like)
  • 2 granny smith apples
  • 3 C. chicken broth
  • 1 C. apple juice
  • Olive oil

Preparation

Step 1

Heat olive oil in a large soup pot.
Add onions and saute until translucent, 5-8 minutes.
Add curry powder and stir to incorporate.
Add squash and apples
Add chicken stock (enough to cover all the solids)
Bring to a boil over medium heat, reduce heat to simmer and simmer for 30 minutes until squash is fork tender
Fill blender 1/3 full and puree soup until it is all blended, working in batches
Finish the soup off with small dice granny smoth apples
