Ingredients
- 1 cup rolled oats
- 1/2 cup oat bran
- 1/2 cup shredded coconut
- 1/3 cup packed brown sugar
- 1/4 cup whole wheat flour
- 3 tablespoons almond butter
- 2 tablespoons water
- 1 tablespoon honey
- 1/8 teaspoon baking soda
- 1/8 teaspoon salt
- 1/8 teaspoon coconut extract
- 2 tablespoons chia seeds
- Nonstick cooking spray
Preparation
Step 1
1. Preheat oven to 325 degrees F. Place oats, oat bran, shredded coconut, brown sugar, and flour in a food processor. Cover and process until finely ground. Add almond butter, the water, honey, baking soda, salt, and coconut extract. Cover and process until combined. Transfer mixture to a large bowl. Stir in the chia seeds (mixture will be crumbly).
2. Coat a 15x10x1-inch baking pan with cooking spray. Press oat mixture firmly into the prepared baking pan (mixture will be pressed thin in the pan). Bake about 20 minutes or until golden brown. Mixture will crisp as it cools.
3. Use a table knife or small metal spatula to release the oat mixture from the pan. Break mixture into small bite-size pieces (about 3/4-inch pieces).
