Mashed potatoes with ricotta

Ingredients

  • 2 1/2 lbs russet potatoes cut into 1 1/2" chunks
  • 1/4 c-1/2c milk
  • 1 c ricotta
  • 3 t thyme
  • 2 tsp lemon zest
  • 3-4 t evoo
  • 2-3 t honey (orange blossom)

Preparation

Step 1

1) in md pot cover potato with water. cover pot and bring to boil over high heat. remove lid, salt water and cook til tender, 12-15 minutes. drain and return potatoes to pot.

2) mash with milk, ricotta, thyme, zest and evoo

3)season with salt and pepper. mash in honey
