Seafood Chowder

Ingredients

  • 4 slices bacon, cut into 1-inch pieces
  • 1 medium onion, cut into thin wedges
  • 2 garlic cloves, crushed
  • 2 cans diced tomatoes
  • 2 cups water
  • 2 cups dry white wine
  • 2 cups sliced carrots
  • 2 cups potatoes, peeled and cubed
  • 1 Tbsp. paprika
  • 2 tsp. basil
  • 2 tsp. thyme
  • 2 tsp. salt
  • 2 lbs. whitefish (cod, haddock)
  • 2 Tbsp. fresh parsley, chopped
  • Grated Parmesan cheese

Preparation

Step 1

In a large stockpot, cook bacon, onion, and garlic until bacon is crisp and onion is transparent. Drain fat.

Stir in tomatoes, water, wine, potatoes, carrots, and spices.

Cover and simmer for 1 hour.

Cut fish into 2 inch cubes and add to stockpot. Continue simmering until fish is close to flaky.

Garnish chowder with chopped parsley and serve with Parmesan cheese.
