Cabbage And Meatballs

Ingredients

  • 2 pounds ground beef or mix of beef and pork
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 medium onion diced fine
  • 1/4 cup fresh chopped parsley
  • 1/2 cup rice par-cooked
  • 1 egg
  • 1 cup fresh bread crumbs
  • 2 cups beef or chicken broth
  • 1 14-16 ounce can diced tomatoes
  • 1 large head cabbage, chopped into large pieces

Preparation

Step 1

Mix meat(s) with salt, pepper, onion, parsley, egg and bread crumbs, mix well then add rice and mix again. Form into 2 inch meatballs. Put a layer of chopped
cabbage into PC, add a layer of meatballs, then another layer of cabbage, keep layering until all is used up and the last layer is cabbage. Add the broth and the diced tomatoes and close cooker, cook for 12 minutes at high pressure.

Note - commercially prepared meatballs can also be used
