Strawberry spinach salad with dressing

Ingredients

  • Dressing
  • 1/2 tsp lemon zest
  • 2 tbsp lemon juice
  • 2 tbsp white whine vinegar
  • 1/3 cup sugar
  • 1 tbsp vegetable oil
  • 1 tsp poppy seeds
  • Salad
  • 1/2 medium cucumber
  • 1/4 small red onion
  • 1 bag (250 g) fresh baby spinach leaves
  • 8 oz fresh strawberries, hulled and quartered
  • 1/4 cup sliced almonds, toasted

Preparation

Step 1

Dressing
Combine lemon zest, juice, vinegar, sugar, oil and poppy seeds in small mixing bowl; wisk until well blended.

Cut cucumber, red onions, strawberries and add to spinach leaves and toss gently. Sprinkle with almonds. Serve immediately.
