Steve's Famous Pumpkin Roll

Ingredients

  • Beat together:
  • 1 cup sugar
  • 2/3 cup solid pumpkin
  • 3 eggs
  • Add:
  • 1 teaspoon baking soda or powder
  • 1/2 teaspoon cinnamon
  • 3/4 cups flour
  • Filling:
  • 6 oz. Cream cheese ( I use 1/3 fat free, don’t use the fat free version)
  • 1 cup powder sugar
  • 4 tablespoons margarine or butter
  • 2/3 teaspoon Vanilla

Preparation

Step 1

Spray cooking sheet with Pam. Line with wax paper and pam again.

Pour batter and spread out. Bake 15 to 18 minutes at 375.

Cool for 5 minutes. Flip on kitchen towel, sprinkled with powder sugar.
Cut in half, roll using the towel. Make sure you roll while warm, as otherwise the
Crust will crack. Cool.

Filling:

6 oz. Cream cheese ( I use 1/3 fat free, don’t use the fat free version)
1 cup powder sugar
4 tablespoons margarine or butter
2/3 teaspoon Vanilla

Mix well, then spread over the unfolded roll. Sprinkle top with powder sugar. Cool.
