Steve's Corn Salad

Ingredients

  • 6 ears corn (cooked and cut from the cob, or use a package of frozen corn, broil for a few minutes)
  • 1 pint cherry tomatoes cut in half
  • 1/4 cup Cilantro, finely chopped
  • 1/3 to 1/2 sliced red onion
  • 1 jalapeno, seeded, and finally diced (I often forget to use this)
  • 1 small clove garlic
  • 1/2 Zucchini, peeled and sliced
  • 2 Limes
  • 1/2 teaspoon ground cumin seeds, toasted
  • 2 Tablespoons olive oil
  • Salt and Pepper to taste

Preparation

Step 1

Combine corn, cherry tomatoes, onions, (jalapeno) zucchini and cilantro.

To make dressing, put small clove garlic in bowl of food processor or use a garlic press.
Add lime, cumin, olive oil, salt and pepper. Adjust amount of ingredients per your taste.
I often whip the ingredients together or use the food processor.
Instead of this dressing, you can always use the extra dressing you made from the Quinoa Salad.
