Chocolate Zucchini Cake

Ingredients

  • 1 cup brown sugar
  • 1/2 cup white sugar
  • 1/2 cup butter
  • 1/2 cup oil
  • 3 eggs
  • 1/2 cup buttermilk
  • 1 tsp vanilla
  • 2 1/2 cups flour
  • 1/2 tsp salt
  • 2 tsp baking soda
  • 1/2 tsp allspice
  • 1/2 tsp cinnamon
  • 4 Tbsp cocoa
  • 2-3 cups grated zucchini
  • 1 cup nuts(opt)
  • 1 cup chocolate chips (opt)

Preparation

Step 1

Cream together in a large bowl, sugars, butter and oil. Add eggs, vanilla & buttermilk and stir well. Sift remaining dry ingredients into bowl. Blend in the zucchini. Pour into 9x13 greased pan and sprinkle the nuts &/or chocolate chips over top. Bake at 325 for approximately 45 minutes.
