Ingredients
- 1/2 cup Italian seasoned bread crumbs
- 2 T. grated parmesan
- 2 T. grated Romano or Asiago cheese
- 1/2 t. garlic powder
- 1/2 t. oregano
- 1/2 t. basil
- 1/2 t. parsley
- 3 medium zucchini
- flour
- 1-2 eggs lightly beaten with water
- 1 cup marinara sauce or ranch dressing
Preparation
Step 1
Preheat oven 400. Spray cookie sheet.
Place crumbs, cheeses, spices in Ziploc bag. Shake well.
Cut each zucchini lengthwise into 8 pieces, cut each piece in half horizontally. Dip each piece in flour, then egg mix, then breadcrumbs. Place on prepared cookie sheets. Bake 10-15 min. until brown.
Serve with marinara or ranch dressing.
