Ingredients

  • 2 cups flour
  • 2 T. grated Parmesan
  • 1/2 t. salt
  • 1/3 cup olive oil
  • 5-7 T. ice cold water
  • 1 egg
  • 1/3 cup milk
  • dash pepper
  • 1/3 cup finely shredded Jack or Gruyere
  • 1 T. chopped green onion
  • 5-6 cherry tomatoes, thinly sliced and /or 24 small herb leaves

Preparation

Step 1

Preheat oven 425. Spray 24 mini muffin cups.
In large bowl stir together flour, Parmesan and salt. Add oil all at once. Mix until crumbly. Add 2 T. water, stir and continue to add water until flour is moistened. Gather in ball. Divide into 24 portions. Press each into muffin cup. Bake 8-10 min. until beginning to brown. Remove from oven and reduce temp to 350.
In small bowl whisk together egg, milk and pepper. Stir in cheese & onion. Fill each cup. Top each with tomato slice or herb leaf. Bake 20 min. until filling is puffed and set. Cool in muffin cups on wire rack.
