Grilled Pork Tenderloin

  • 1/4 cup firmly packed light brown sugar
  • 1/4 cup cider vinegar
  • 1/4 cup soy sauce
  • 2 teaspoons dry sherry, optional
  • 1 teaspoon honey
  • 1 teaspoon chili powder
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon cayenne pepper
  • 4 cloves garlic, minced
  • 1 pork tenderloin (about 1 1/2 to 2 pounds)

Preparation

Step 1

1. Preheat the grill to medium.

2. Combine brown sugar, vinegar, soy sauce, sherry, honey, chili powder, cumin, cayenne pepper and garlic in a small bowl and mix well.

3. Place pork in a shallow dish. Pour the brown sugar mixture over the pork. Chill, covered, for 8 to 12 hours.

4. Remove pork from marinade, reserving the marinade. Grill pork 6 inches from heat until cooked through, about 20 to 25 minutes.

5. Place reserved marinade in a small saucepan. Bring to a boil over medium-high heat. Serve with the grilled pork.
