Jim's Halibut Olympia

Ingredients

  • (Optional) Marinate the halibut in white wine overnight. Drain and dry well.
  • 1/4 cup butter
  • 1 medium onion, chopped
  • 1/4 cup finely chopped red pepper
  • 1/4 cup finely chopped green pepper (or jalapeno for added zest)
  • Johnny’s Seafood Seasoning (or other seasoning of choice)
  • 2 - 3 lbs fresh halibut fillets (or thawed frozen)- remove brown parts
  • 1 bunch green onions, finely chopped
  • 7-8 pieces cooked crumbled bacon
  • 1/2 teaspoon garlic powder
  • juice of half a lemon (or to taste)
  • 2 cups sour cream
  • 2 cups mayonnaise
  • 1 Tablespoon Dijon Mustard
  • 1 tablespoon Worcestershire Sauce
  • 3/4 cup parmesan cheese
  • 1 teaspoon dried dill
  • white pepper and salt to taste

Preparation

Step 1

1. Preheat oven to 375 degrees.
2. Melt butter; pour into bottom of 13X9-inch baking pan.
3. Spread onion and peppers over melted butter and top with halibut fillets. Sprinkle the halibut with Johnny’s Seafood Seasoning (or other favorite seasoning)

4. Mix together remaining ingredients; spread over halibut..
5. Bake in oven until fish flakes (about 10 to 15 minutes.). Check the halibut after 10 minutes and cook until halibut is "almost" done. Remove from the oven and cover with tin foil. Allow the dish to rest for ten minutes before serving.
