Step 1

Clean defrosted turkey thoroughly removing all insides. Preheat oven to 325. Stuff turkey with stuffing (see recipe) front and back. Sprinkle turkey with garlic salt and paprika all over (front and back). Tie legs with twine so that the stuffing wont come out. Add slices of salted butter to legs, wings, top and rear. Place in oven. Inside temperature should read 180 degrees at fattest section (thigh). General rule: 3lbs/hr of cook time (18 lbs=6 hrs). At about 2 hours in the oven, cover the top of the turkey with aluminum foil so that it doesnt burn. Baste turkey with its drippings every 45 mins to 1 hr. When done, let sit for 1/2 hr before carving.
