- 8 OZ UNCOOKED ZITI RIGATI
- 2 TSP OIL
- 1 MEDIUM RED BELL PEPPER CHOPPED
- 2 CUBANELLE PEPPERS, CHOPPED
- 1 MEDIUM ONION, CHOPPED
- 12 OZ SPICY ITALIAN SAUSAGE
- 1 CUP PART SKIM RICOTTA
- 1 1/2 CUPS SHREDDED MOZZERALLA
- 1/4 CUPS GRATED PARMESAN
- 1/4 CUP CHOPPED PARSLEY
- 2 CUPS MARIANARA SAUCE
Preparation
Step 1
HEAT OVEN TO 400 COOK PASTA IN LARGE POT OF LIGHTLY SALTED WATER.
MEANWHILE, HEAT OIL IN LARGE SKILLET OVER MEDIUM HEAT. ADD PEPPERS, ONIONS, SAUSAGE. COOK 6 MINUTES OR UNTIL SAUSAGE IS BROWNED, REMOVE FROM HEAT.
MIX RICOTTA, 1 CUP MOZZERELLA, 3 TBSP PARMESAN & PARSLEY IN BOWL, DRAIN PASTA, TOSS WITH CHEESE MIXTURE, SAUSAGE MIXTURE, AND 1 CUP MARIANARA SAUCE
POUR PAST MIXTURE INTO SHALLOW BAKING DISH, SPOON REMAINING MOZZERELLA & PARMESAN. BANK UNCOVEVRED 20 MINUTES OR UNTIL BUBBLY.
