Ingredients
- 3 Tbs. packed brown sugar
- 2 Tbs. paprika
- 2 Tbs. garlic powder
- 1 to 2 Tbs. coarsely ground black pepper
- 2 tsp. ground cumin
- 2 tsp. dry mustard
- 1 tsp. salt
- 3 1/2 - 4 lbs pork loin back ribs
- 1 Tbs. vegetable oil
- 1 med. onion finely chopped 1/2 cup
- 1 8oz. can tomato sauce
- 1/3 cup regular or non alcoholic beer
- 1/4 - 1/3 cup honey
- 2 Tbs. worcestershire sauce
- 2 Tbs. vinegar
Preparation
Step 1
for rub:
in small bowl stir together first 7 inghredients
reserve 3 Tbs. of mix
sprinkle remaining over top and bottom of ribs, rub in
place in 3 qt. rectangular baking dish
cover, chill, 2-24 hrs.
preheat grill, reduce heat to med., adjust for indirect cooking
place ribs in a roasting pan
cover, grill for 1 1/2 - 1 3/4 hrs. or until tender
brushing with sauce last 5 min of grilling
for sauce:
heat oil in sauce pan over med.
cook and stir onion in hot oil 5 min. or till tender
stir in tomato sauce, beer, honey, worcestershire sauce, vinegar and reserved rub
simmer uncovered, 20 min. or till reduced to 1 1/2 cups
stir occasionally
