Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onion
- 1 cup diced cooked chicken
- 1 cup salsa, any variety
- 1 can (4 ounces) DicedJalapefio Peppers,
- drained
- 1 1/2 cups (6 ounces) Monterey Jack cheese
- 1 package (10-count) Tostada Shells
Preparation
Step 1
PREHEAT oven to 350°F.
HEAT olive oil in medium skillet over medium-low heat. Add onions; cook and
stir 4 minutes or until translucent. Stir in chicken, salsa and jalapenos.
SPOON mixture into 2-cup gratin dish" or 6- or 7-inch ovenproof skillet.
Spread cheese evenly over top.
BAKE 10 minutes or until cheese is melted and bubbly.
BREAK tostada shells into large pieces. Serve with fundido for dipping.
*A gratin dish is a shallow ovenproof ceramic dish. If you don't have a gratin dish,
substitute an 8-inch glass pie pan.
