Gazpacho

Ingredients

  • 1 cucumber, halved and seeded, not peeled
  • 2 red peppers, cored and seeded
  • 4 plum tomatoes
  • 1/2 red onion
  • 3 garlic cloves. minced
  • 3 c (23 oz) tomato juice
  • 1/4 c white wine vinegar
  • 1/4 c olive oil
  • 1/2 tsp salt
  • 1 tsp pepper
  • 2 jalapenos, seeded and minced

Preparation

Step 1

Roughly chop cucumber, bell peppers, jalapenos, romatoes, onion into 1 inch pieces.
Pulse each veggie eparately in food processor until coarsely choped.
Mis together in largebowl.
Add remaining eingredients. Mix well and chill for several hours to blend.
