Chocolate Salad Dressing Cake

This is a favorite "made from scratch" cake, that my mom made many times for many years. I made it too for my family and would always get rave reviews especially when I frosted it with the peanut butter frosting that my husband's aunt would make, (I've included that at the end of this cake recipe).

Ingredients

  • 1 1/4 cups sugar
  • 1 cup salad dressing (I use mayonnaise)
  • 2 cups flour
  • 4 tablespoons cocoa
  • 2 teaspoons baking soda
  • 1 teaspoon salt
  • 1 cup hot or cold water
  • 1 teaspoon vanilla

Preparation

Step 1

Heat oven to 350°F.
Mix all ingredients together well. Pour into large baking pan. Bake 55 to 60 minutes.

I like to frost this cake with the following homemade Peanut Butter Frosting: Cream ¼ cup butter or margarine together with ¼ cup peanut butter and 1 teaspoon vanilla. Add 2½ cups sifted confectioners’ sugar, alternately with 3 tablespoons milk and beat until light, fluffy and spreadable.
