Chocolate Rasperry Cheesecake

Ingredients

  • Glaze follow recipe:
  • 1 chocolate flavored pie crust.
  • 12 oz cream cheese, softened
  • 1/2 cup sugar
  • 1/2 teaspoon vanilla
  • 2 eggs
  • 1/2 cup frozen raspberries well drained and thawed

Preparation

Step 1

Preheat oven to 325

In med bow beat cream cheese until fluffy. Gradually add sugar and vanilla. Add eggs on at a time until well blended. Fold in raspberries, reserving a few for garnish. Place in crust on baking sheet. Fill with raspberry mixture. Bake for 35 minutes. Cool completely and chill.

Glaze: Combine 1 teaspoon margarine, 1 ounce unsweetened chocolate, 1/4 cup powered sugar, 1 teaspoon dark corn syrup and 2 teaspoon boiling water over low heat until chocolate is melted. Remove from heat; stir in 1/2 teaspoon vanilla. Pour over chilled cheesecake and chill for 3 hours. Garnish with reserved raspberries.
