Flourless Peanut Butter and Chocolate Chip Cookies

I found this recipe years ago in a "Thank you" cookbook, courtesy of Bon Appétit magazine, for a paid subscription. When in middle school, my son Kyle entered them in the Lewis County Fair and walked away with a blue ribbon.

Ingredients

  • 1 C. Chunky old fashioned peanut butter
  • (Not Skippy or Peter Pan… Use peanuts and salt only peanut butter)
  • 1 C. Golden brown sugar; packed
  • 1 Large egg
  • 1 t. Baking soda
  • 1/2 t. Vanilla extract
  • 1 C. Semi-sweet chocolate chips (about 6 ounces)

Preparation

Step 1

Preheat oven to 350°F.

Mix first 5 ingredients in medium bowl.
Mix in chocolate chips.

Using moistened hands, form generous 1 T. dough for each cookie into ball.
Arrange on 2 un-greased baking sheets, spacing 2 inches apart.

Bake cookies until puffed, golden on bottom and still soft to touch in center, 10-12 minutes.

Cool on sheets 5 minutes.

Transfer to racks; cool completely.
