Chicken Bolognese

Scrumptious!! I blended two recipes from Ladies Home Journal and America's Test Kitchen to come up with this recipe. It was hard not to have a second helping. So good!

Ingredients
- 3 strips bacon, finely chopped or pre-cooked bacon
- 1 tbsp olive oil (if using pre-cooked bacon, use 2 tbsp oil)
- 2 cloves garlic
- 1 carrot, finely chopped
- 1 cup onion, finely chopped
- 3 stalks kale, stem removed, finely chopped (optional)
- 1 lb ground turkey
- 2 tsp kosher salt
- 1/4 cup tomato paste
- 16 oz diced tomatoes, Italian spiced
- 1/4 cup white wine
- 3/4 chicken broth
- 1/4 tsp red pepper flakes
- 1/2 tsp garlic powder
- 3 tbsp heavy cream
- Penne pasta, cooked
- Parmesan cheese, grated
Preparation
Step 1
In Dutch oven pot, saute bacon in oil until crisp. Add garlic cloves, onion, and carrot. Cook until vegetables are tender. Add ground turkey and salt; cook while breaking up turkey. Stir in tomato paste, wine, broth, diced tomatoes and spices. Cook until sauce has reduced by 1/2. Add cream; heat for 5 min. Stir in pasta; cook for 1 minute. Add cheese to taste; stir. Serve.
