Western Potatoe Rounds

Ingredients

  • 2 large unpeeled baking potatoes (about 1-1/4 pounds)
  • 1 cup (4oz) shredded Co-Jack cheee
  • 6 bacon slices, crisply cooked, drained and crumbled
  • 1/3 cup green onin slices
  • 1/4 cup barbecue sauce

Preparation

Step 1

Preheat oven to 450 degrees. Cut potatoes into 1/4 inch-thick slices. generously spray both sides of potatoe slices with oil; place on cookie sheet. Bake 20 min. or until lightly browned; remove from oven. In a bowl combine cheese, bacon, and green onion. Generously brush potato slices with barbacue sauce; sprinkle with cheese mixture. Return potatoe slices to oven. Bake 3-5 min. or until cheese is melted.
