Orange Raisin Pie

Ingredients

  • 1 1/4 cups raisins
  • 2/3 cup orange juice
  • 1 Tbsp. orange zest
  • 2/3 cup superfine sugar
  • 1 Tbsp. flour
  • 2 eggs
  • 1 cup sour cream
  • 1/2 recipe sweet pastry
  • 1 egg white, lightly beaten, for brushing
  • icing sugar, for dusting

Preparation

Step 1

Preheat oven to 325*.

Cook raisins and orange juice in small saucepan over ow heat for 5 minues or until raisins are plump. Add orange zest. Stir in sugar and flour until combined. Cook for 5 minutes or until thickened. Remove from heat.

Whisk together eggs and sour cream in a bowl. Stir in raisin mixture and set aside.

Roll out pastry to 1/8" thickness. Line the base of a lightly greased 9" metal pie plate. Trim the excess pastry and brush the edge with egg white. Place pie plate on a baking tray.

Pour the raisin mixture into the shell and bake for 35-40 minutes or until cooked through. Dust with icing sugar to serve.
