Ingredients
- 1/2 lb. sliced bacon
- 1 c. (8oz) sour cream
- 3 eggs, separated
- 2 tbsp. flour
- 1/8 tsp. pepper
- 1 pkg. (10oz) frozen chopped spinach, thawed & squeezed dry
- 1/2 c. (2oz) shreddec sharp Cheddar cheese
- 1/2 c. dry bread crumbs
- 1 tbsp. butter, melted
Preparation
Step 1
Preheat oven to 350. Spray 2 qt. round baking dish w/ nonstick cooking spray.
Place bacon in single layer in lg. skillet; cook over med. heat till crisp. Remove from skillet; drain on paper towels. Crumble & set aside.
Combine sour cream, egg yolks, flour, & pepper in lg. bowl; set aside. Beat egg whites in med. bowl w/ electric mixer on high till spoft peaks form. Stir 1/4th whipped egg whites into sour cream mixture; fold in remaiing egg whites.
Arrange half of spinach in prepared dish. Top w/ half of sour cream mixture; sprinkle w/ 1/4 c. cheese. Sprinkle bacon over cheese. Repeat layers, ending w/ 1/4 c. cheese.
Combine bread crumbs & butter in small bowl; sprinkle evenly over cheese. Bake, uncovered, 30-35 mins. or till eggs are set. Let stand 5 mins. before serving.
