Shrimp Del Sol

Ingredients

  • 1 (14.5 oz) can diced tomatoes with jalapeno peppers, undrained
  • 1 (14.5 oz) can diced tomatoes
  • 2 TBS tequila
  • 1 TBS fresh lime juice
  • 1 1/2 tsp ground cumin
  • 1 lb steamed shrimp, peeled
  • 1/4 cup minced fresh parsley
  • 1 package angel hair pasta, uncooked
  • 1 tsp olive oil

Preparation

Step 1

Combine first 5 ingredients in a saucepan. Bring to a boil. Reduce heat; simmer 5 minutes. Add shrimp and parsley; simmer til heated through. Cook pasta using 1 tsp oil; drain. Toss shrimp with pasta.
