APRICOT CHICKEN WITH BROCCOLI

Ingredients

  • 4 skinless chicken legs (thighs and drumsticks)
  • Salt and pepper
  • 1 tablespoon vegetable oil
  • 1 cup water
  • 4 ounces dried apricots
  • 3 tablespoons brandy
  • 1/2 pound broccoli, cut into florets

Preparation

Step 1

• Season chicken with salt and pepper.

• Pre-heat skillet over medium-high heat. Brown chicken in skillet with vegetable oil. Transfer chicken to Microwave Pressure Cooker.

• Place all ingredients for chicken into Microwave Pressure Cooker. Place lid on top and seal.

• Place Cooker into microwave and cook on HIGH for 15 minutes.

• Remove Cooker from microwave and allow pressure to drop. Remove lid and place steamer plate on top of chicken. Put broccoli into steamer basket and place steamer basket on top of steamer plate, replace lid, seal and cook on HIGH for 5 minutes.

• Remove Cooker from microwave and allow pressure to drop. When pressure has dropped, remove lid, season to taste and serve.
