Zucchini Bread

Ingredients

  • 2 cups sugar
  • 3 cups flour
  • 3 cups peeled, grated zucchini (4 to 5 small)
  • 1 1/2 cups chopped walnuts
  • 1 cup vegetable oil
  • 3 eggs
  • 1 tablespoon cinnamon
  • t teaspoon salt
  • 1 teaspoon baking powder
  • 1 teaspoon baking powder

Preparation

Step 1

Beat sugar and oil well. Add eggs one at a time, beating well after each. Add dry ingredients (flour, salt, baking powder, baking soda). At this point will get hard to mix, mix as best as you can. Fold in zucchini, cinnamon and nuts (zucchini will add needed moisture). Grease pan (I use the nonstick spray even in nonstick. I also use a bundt pan vs a bread pan). Cook at 350 degrees for 1 hour and 15 minutes (maybe longer, use toothpick test.)

Icing: Mix powdered sugar with to your consistency-Let bread cool completely, spoon icing on.
