Banana Sour Cream Coffeecake

  • 1/2 cup chopped nuts
  • 1/4 cup sugar
  • 1/2 tsp cinnamon
  • 1/2 cup shortening
  • 1 cup sugar
  • 2 eggs
  • 1 cup mashed banana (2 medium)
  • 1 tsp vanilla
  • 1/2 cup sour cream
  • 2 cups flour
  • 1 tsp baking powder
  • 1 tsp soda
  • 1/4 tsp salt

Preparation

Step 1

In small bowl combine nuts, 1/4 cup sugar and cinnamon, stir well and set aside.
In a large mixing bowl combine shortening and 1 cup sugar, cream until light & fluffy. Beat in eggs, banana and vanilla, stir in sour cream. Sift together flour, baking powder, soda & salt, add to creamed mixture, stirring just to blend.
Sprinkle half of reserved cinnamon mixture in bottom of a well-greased 10 inch bundt pan, spoon half of batter into pan. Sprinkle remaining cinnamon mixture over batter, spoon remaining batter into pan.
Bake @ 350 for 40-45 minutes or until toothpick inserted in center comes out clean. Cool cake 5 minutes in pan on a wire rack. Loosen edges of cake, if necessary. Invert cake on serving plate, serve warm or cold.
