Ingredients
- 3/4 cup dried Black Mission figs
- 2 cups boiling water
- 1/4 cup balsamic vinegar
- 1/4 cup tomato paste
- 1 tsp. coarse salt
- 2 tsp. safflower oil
- 2 garlic cloves, minced
- 1 cup water, room temperature
- 1 bay leaf
- 1/2 tsp. salt
Preparation
Step 1
1. Soak the figs in the boiling water until soft, about 5 minutes; drain. Pulse with balsamic vinegar, tomato paste, and coarse salt in a food processor, scraping down sides often, until pureed, about 3 1/2 minutes.
2. Heat safflower oil in a saucepan over medium heat. Cook garlic for 30 seconds. Pour in the fig puree.
3. Whisk in the room temperature water and bay leaf. Reduce heat to low. Simmer for 15 minutes. Season with salt. Discard the bay leaf.
