Ingredients
- 1 medium papaya, peeled, seeded, diced
- 1/2 cup diced pineapple
- 1 mango, peeled, diced
- 1 roasted red pepper, diced
- 2 Tbsp minced shallots
- 1 small jalapeno, stem removed, seeded, minced
- 1 to 2 Tbsp rice vinegar
- 1 to 2 tsp crushed garlic
- 1 tsp crushed ginger
- 1 tsp coarse black pepper
- 1 tsp kosher salt
- 1/4 cup fresh chopped cilantro
Preparation
Step 1
In a medium bowl, combine the papaya, pineapple, mango, red pepper, shallots and jalapeno.
In a separate small bowl, stir together the rice vinegar, garlic, ginger, pepper and salt. Pour over the salsa and gently toss to combine. Fold in the cilantro. Chill before serving.
