Papaya Salsa

Serve this with grilled chicken, pork or fish kebobs.

Ingredients

  • 1 medium papaya, peeled, seeded, diced
  • 1/2 cup diced pineapple
  • 1 mango, peeled, diced
  • 1 roasted red pepper, diced
  • 2 Tbsp minced shallots
  • 1 small jalapeno, stem removed, seeded, minced
  • 1 to 2 Tbsp rice vinegar
  • 1 to 2 tsp crushed garlic
  • 1 tsp crushed ginger
  • 1 tsp coarse black pepper
  • 1 tsp kosher salt
  • 1/4 cup fresh chopped cilantro

Preparation

Step 1

In a medium bowl, combine the papaya, pineapple, mango, red pepper, shallots and jalapeno.

In a separate small bowl, stir together the rice vinegar, garlic, ginger, pepper and salt. Pour over the salsa and gently toss to combine. Fold in the cilantro. Chill before serving.
