Popcorn cookies

Ingredients

  • 2 1/2 c flour
  • 1 t baking soda
  • 1 tsp salt
  • 1 c room temp butter
  • 1 c light brown sugar
  • 1/2 c sugar
  • 2 egg yolks
  • 1 t vanilla
  • 1 1/2 c raisenettes
  • 3 c buttered, salted popcorn

Preparation

Step 1

1) heat oven to 325, line sheet with parchment paper

2)in small bowl whisk flour, baking soda and salt.

3) cream butter til fluffy and add both sugars til combined.

4) separate whites and yolk, discarding the whites. add eggs and vanilla to butter mix and blend on medium til incorporated

5) add flour to wet mix in batches til combined. stir in raisenettes. fold in popcorn.

6) scoop dough into mounds about 2t.. 9 per sheet..staggered.

7) bake 14 minutes or til golden, turning pans galway thru. transfer to cool
