Sweet Potato Pie-Coconut Pudding Mix

Ingredients

• 2 cups mashed sweet potatoes
• 1 small package instant coconut pudding mix
• 1 1/2 cups sugar
• 1 stick butter melted
• 1/2 tsp. apple pie spice
• 3 eggs beaten
• 2 unbaked pie shells

Preparation

Step 1

mash sweet potatoes add coconut pudding mix, sugar butter, apple pie spice and eggs. Pour into 2 pie shells. I just mixed my pie ingredients in my Vitamix and poured into pie shells.

Bake 350 degrees 30-35 minutes till center is set.
