Au Gratin Potatoes

Ingredients

  • 7 large potatoes
  • 2 1/2 tablespoons flour
  • 1 pound Colby cheese, grated
  • Salt
  • Pepper
  • 3/4 cups (1 1/2-sticks) butter
  • 3 cups milk
  • Paprika

Preparation

Step 1

Heat oven to 350°F

Boil potatoes with skins. Cool, then chill. Peel and dice.

In buttered baking dish, mix potatoes, 3/4 pounds of grated cheese, salt and pepper.

In sauce pan mix flour, milk, and 1/2 cup butter. Heat over medium low heat until thickened, then pour over potatoes and mix.

Spread remaining cheese over the top. Pour 1/4 cup melted butter over the cheese, and sprinkle with paprika. Bake at 350°F for 1 hour.
