Chicken with Apricot, Tamarind and Chipotle Sauce

Ingredients

  • 1 chicken cut in 8 pieces, or chicken breasts cut into serving size.
  • Salt and pepper
  • vegetable oil
  • 3/4 cup dried apricots, roughly chopped
  • 3 TBS apricot preserves
  • 3 TBS tamarind concentrate
  • 1/4 cup sugar
  • 2 TBS sauce from chipotles in adobo
  • 1 or more chopped chipotle peppers (optional)

Preparation

Step 1

Season the chicken with salt and pepper.
Heat a skillet over high heat and add oil.
Place the chicken pieces (skin side down if there is skin) in a single layer.
Reduce heat to medium and brown slowly, turning occasionally until evenly browned.
Pour 4 cups water (3 if using chicken breasts, raise heat to medium high, and bring to simmer. Stir in dried apricots, apricot preserves, tamarind, sugar and chipotle.
Simmer, adjusting heat as necessary until sauce has thickened and coats chicken. adjust salt and pepper to taste.
Serve.
